Mix all ingredients in a bowl.

Take 2 tablespoon of the cookie mixture, shape into a ball, and then press flat onto a silpat fitted baking tray. Set baking tray in the freezer for 5-10 minutes and enjoy! To store, I like to leave these cookies in the freezer so they stay hard.
