Directions
In a double broiler or in a microwave, melt your chocolate and 2 tbsp of the coconut oil.
Line a cupcake tray with silicon liners (works best) or paper liners. Place 1 tbsp of the melted dark chocolate at the bottom of each liner. Once all the liners have chocolate in them (10 is the perfect amount for the amount of chocolate), tilt the cupcake tray so that the chocolate goes up a little (1/2 inch) on all sides of the liner. Place in the fridge for about 5 minutes or until they have set completely.
Mix the peanut butter and 1 tbsp of coconut oil. Take the tray out of the fridge. Place 1 tsp of peanut butter (or more!) in the middle of each chocolate layer and smooth down with the back of your spoon making sure not to go all the way to the edge.
Top the peanut butter layer with 1 tbsp of melted chocolate making sure to cover the peanut butter completely.
Place in the fridge for about 10-15 minutes or until it's completely set. These should be stored in the fridge (if they last). Enjoy!
