Quick and easy Vegan Strawberry Cheesecake Bites made in a blender, I mean come on who can pass that up! These are so easy to make and so extremely creamy that you will forget that it's completely plant based! I love how quick this comes together, and yes you do have to wait until they freeze, but they are worth it!
Soak cashews in warm water for at least 1 hour.
Drain cashews and add to blender along with all other ingredients except for dark chocolate. Blend until smooth.
Pour into 4x8 loaf pan and freeze for at least 2 hours. Drizzle with melted dark chocolate. Enjoy!
