I have never heard of this cake before but when I was searching for recipes around the world, I kept stumbling on this one from South Africa. Now I looked at A LOT of different variations of this and came up with this Vegan South African Malva Pudding Cake that is probably not the most authentic, but I promise you, it's delicious! You must try this one out!

South African Malva Pudding

 1 cup all purpose flour
 1 tsp baking soda
 1 tbsp Coconut oil (melted)
 1 tbsp Monkfruit sugar (or any other type of granulated sugar)
 2 tbsp Monkfruit Maple Syrup (or regular)
 3 tbsp apricot jam
 1 tbsp ground flaxeed (mixed with 3 tbsp of water)
 ½ cup unsweetened almond milk
Coconut Cream Sauce
 1 cup Canned Coconut Milk (full fat)
 1 tsp vanilla extract
 1 tbsp Monkfruit sugar (or any other type of granulated sugar)

Preheat oven to 350 degrees F.

Whisk together the dry ingredients (flour and baking soda). Set aside while you whisk together all the wet ingredients (oil, sugar, maple syrup, jam, milk, flaxeed, and water).

Pour the wet ingredients into the dry ingredients and combine. If the mixture is a little dry, add a splash or 2 of almond milk.

Pour into a greased 8x8 baking pan. Bake for 23-25 minutes.

While cake is baking, combine all the ingredients for the coconut sauce in a small saucepan over medium heat. Once boiling, turn off the heat and set aside.

Once cake is done, pierce top with a fork all over the cake. Pour half of the coconut sauce on top and let it soak through. Enjoy warm!
