Vegan Jambalaya

Cajun spiced Vegan Jambalaya made in the instant pot is a perfect meatless Monday night recipe that will have your whole family running for seconds! It also makes for the perfect leftover lunch! Comes together so fast and is perfect for those busy night where you need a delicious and quick dinner on the table!

 1 tsp avocado oil
 1 medium onion (diced)
 1 green bell pepper (diced)
 3 celery stalks (diced)
 5 garlic cloves (minced)
 1 ½ cups rice
 15 oz canned diced tomatoes
 2 Chipotle Field Roast Sausages (Plant-Based)
 3 cups vegetable broth
 1 tbsp cilantro (optional)
Seasoning
 1 ½ tbsp Cajun Seasoning (I used salted)
 2 tsp smoked paprika
 1 tsp black pepper

Push the saute mode on your instant pot and heat up the avocado oil. Once oil is hot, saute the onions, garlic, bell pepper, and celery for 10 minutes.

Add in the seasoning and rice. Saute for another few minutes. Add in the rest of the ingredients except for the garnish if using.

On manual pressure, cook for 3 minutes. Quick release and garnish with cilantro. Enjoy!
