Vegan Chocolate Mousse

Who knew that aquafaba (chickpea water) was so valuable! This Vegan Chocolate Mousse is so easy and quick to make and uses water from cooking chickpeas that you normally would throw away anyways. The dark chocolate flavor of this mousse is so amazing! You must try this recipe out!

 1 cup aquafaba (~2 cans of chickpea water)
 1 tbsp monkfruit sweetener (more if you like it sweet)
 ¾ cup dark chocolate
 2 tbsp unsweetened almond milk

Whip the sugar and aquafaba together with a hand mixer until stiff peaks form (roughly 8-10 mins).

On a double broiler or in the microwave, add your chocolate and milk. Melt until the chocolate is pourable.

Let the chocolate cool to room temperature and add to your aquafaba mixture. Whisk until combined and fluffy. Do no over mix or it will deflate.

Place in jars or cups and refrigerate for at least an hour. Top with fruits or chocolate chips and enjoy!
