This Spinach Strawberry Quinoa Bowl has all the ingredients that go perfectly well with balsamic vinegar. I love how easy this recipe is and how perfect it is if you are meal prepping. Spinach Strawberry Quinoa Bowl

Balsamic Dressing
 1 tbsp balsamic vinegar
 3 tbsp olive oil
 salt and pepper to taste
Bowl
 2 cups spinach
 1 cup cooked quinoa
 1 cup of strawberries
 1/2 cup chopped grape tomatoes
 1/2 cup extra firm tofu (drained, rinsed, and cut into 1/2 inch squares)
 1/4 cup crumble light feta cheese
 1/4 cup red onions
 1/2 cup avocado
 jalapeƱo (optional)
 basil (optional)

Mix all your ingredients for the balsamic dressing until well combined and creamy. Set aside.

In two separate bowls, split all the ingredients for the bowl. Drizzle a tbsp or more of the dressing on top. Enjoy right away or cold for lunch!
