A recipe that is hearty, filling, and so delicious! This Spiced Potatoes and Beans recipe is a quick meatless Monday dinner idea, but honestly can be made and devoured any time or day of the week! I love how protein packed it is and keeps me feeling very satisfied!

 ½ medium onion (finely diced)
 3 garlic cloves (minced)
 ½ jalopeno (finely diced)
 ¼ cup cilantro (finely chopped)
 1 can red kidney beans
 5 oz potatoes
 ½ tsp salt
 ½ tsp black pepper
 1 bay leaf
 ½ tbsp Sazon Seasoning (homemade or store bought)

 1 tbsp coriander powder
 1 tbsp cumin powder
 1 tbsp garlic powder
 1 tbsp tumeric powder
 1 tbsp oregano
 2 tsp salt

Add oil to a frying pan, once hot add the onions, garlic, and cilantro and fry for 4-5 minutes.

Add the entire can of beans, 1 cup of water, spices, bay leaf, and potatoes. Simmer on medium heat for about 15-20 minutes until the sauce is nice and thick.
