Soy Chorizo Pasta

If you have not had the soy chorizo from Trader Joe's you are missing out! I tried this about a few months ago for the first time and fell in love! This pasta dish with the soy chorizo and broccoli is the perfect mix of salty, creamy, and smoky! Best part, it's ready in 30 minutes using just one pot!

 16 uncooked pasta
 7 broccoli florets
 1 tbsp olive oil
 0.50 cup onions (diced)
 3 garlic cloves (minced)
 1 soy chorizo (from Trader Joe's)
 0.25 cup parmesan cheese
 salt & pepper to taste

Bring a big pot of water to a boil. Add the pasta and broccoli to the pot and cook until pasta is al dente (according to package directions).

Drain the pasta, making sure to reserve 1 cup of the pasta water. Set aside the cooked pasta and broccoli. In the same pot, heat the olive oil on medium.

Add the onions and garlic to the pot. Saute for a few minutes until translucent.

Add in the soy chorizo to the pasta and saute for a few minutes.

Add in the pasta and broccoli to the pot with half of the pasta reserve water. Stir and and make sure the pasta is a creamy consistency, if not add in the rest of the pasta water.

Add in the parmesan cheese and stir everything. Taste for salt and pepper. Enjoy!
