Slow Cooker Chicken Chili

What’s better on a cold, winter day than a hearty chicken chili?! You got me! I love “set it, forget it” types of recipes and this one is no different. A beautifully thick and creamy chili that will definitely warm you right up! I seriously love Slow Cooker recipes, what's your favorite?!

 2 ground chicken
 1 large onion (diced)
 3 cloves of garlic (minced)
 2 tsp salt
 2 tsp black pepper
 1 red bell pepper diced
 1 can black beans (15oz) rinsed and drained
 1 can kidney beans (15oz) rinsed and drained
 1 can diced tomatoes (14.5oz)
 1 can pure tomato sauce (15oz)
 1 can diced green chiles (4oz)
Spices
 0.50 tsp smoked paprika
 0.75 tsp chili powder
 2 tsp cumin powder
 1 tsp garlic powder
 0.50 tsp onion powder
 3 bay leaves

Heat a medium frying pan and medium-high heat. Add in your ground chicken, onions, and garlic. Fry until you no longer see any pink in the ground chicken (about 4-5 minutes).

Add in your diced bell pepper and fry for an additional 3 minutes. Add your ground chicken mixture to your slow cooker.

Add in your two beans (black and kidney beans), diced tomatoes, tomato sauce, diced green chilies, spices (chili, paprika, cumin, garlic, onion), and bay leaves. Mix everything all together until well combined. Set on high for 5 hours or on low for 8 hours. The longer and slower you cook your chili the better the taste!

Taste for salt and pepper and add if needed. Serve hot with some cilantro, onions, jalapenos, sour cream, cheese, chips, or just enjoy it on its own!
