I love skewers in general, but this one with the mix of sweet and spicy is perfect when you want it all! I love this Pineapple Chicken Skewers because something about the combo of grilled pineapples, veggies, and chicken is magical! You must try this one out at your next barbeque!

 2 lbs chicken breasts
 2 bell peppers (square pieces)
 1 canned pineapple chunks
1 medium red onion (square pieces)
Marinade for chicken
¼ cup pineapple juice (from the can)
¼ cup coconut aminos (or soy sauce)
 1 tbsp olive oil
 1 tbsp honey
1 ½ tbsp sambal sauce (chili paste)
 2 tsp onion powder
 2 tsp garlic powder
 1 tsp mustard powder
1

Dice the chicken in square pieces and mix with the marinade. Let marinade in the fridge for 3 hours or overnight if possible.

2

Soak skewer stick in water for about 20 mins. Then feed through chicken, bell pepper, pineapple chunks, and onions in a pattern. Keep making skewers until chicken runs out. You may have some veggies left over that you can throw into a stir fry later.

3

Preheat grill to medium heat for about 10 minutes.

4

Spray with oil and place chicken skewers on one side for about 4-5 minutes. Once all the chicken is on the grill, brush on the leftover marinade on the chicken skewers. Close the lid and let cook.

5

Once 4-5 minutes has passed, flip chicken skewers to other side, and brush on remaining marinade. Close lid and cook for additional 4-5 minutes. Take off the girl once done and enjoy!
