A bright, colorful, and delicious summer salad recipe that will not disappoint! This Israeli Couscous Summer Salad has the bright vegetables of the summer with a perfectly tangy dressing, that just screams summer in my opinion!

Israeli Couscous Summer Salad

 8 oz Israeli Couscous
 2 tsp avocado oil
 1 small onion (diced)
 3 garlic cloves (minced)
 2 cups vegetable broth
 1 ½ cups zuchinni (julienned)
 1 bell pepper (julienned)
 1 cup cherry tomatoes (halved)
 10 green olives (sliced)
 3 tsp crumbled feta cheese
Salad Dressing
 3 tbsp olive oil
 1 tbsp lemon juice
 ½ tsp salt
 ½ tsp black pepper
 3 tbsp cilantro or parsley (chopped)

Heat the avocado oil in a medium frying pan or pot. Once hot, add the onions and garlic and saute for about 5-6 mins.

Add the couscous and saute for an additional 5 minutes.

Add the vegetable broth and cook for about 12 minutes (according to the package). Once all the liquid is absorbed and the couscous is cooked remove from stove and set aside.

Whisk all your salad dressing ingredients together.

In a large bowl add in all the ingredients and give everything a good mix. Enjoy right away or cooled!
