This Grilled Chicken Barley Bowl is a perfect lunch for the summer time. I love it because you can pack it for lunch and have it cold. No need to warm up anything. I love how nutrition packed and easy it is to make. Play around with the ingredients and make it for lunch next week!

Grilled Chicken Farro Bowl

Barley
 8.8 oz barley (cooked) (I used Trader Joe's 10 minute bagged barley)
 1/2 cup chopped mint
 1 lime (juiced)
 1 tbsp olive oil
 1/2 tsp salt
 1/2 tsp black pepper
Dressing
 1 tbsp Dijon Mustard
 1 tbsp Honey Mustard
 1 tbsp Olive Oil
 2 tbsp lemon juice
 salt & peper to taste
Bowl (2 bowls)
 2 cups shredded lettuce
 1/2 cup bell pepper (sliced)
 1/2 cup shredded carrots
 1/2 cup cucumber (diced)
 8 oz grilled chicken

Mix up all your ingredients for the barley (barley, mint, olive oil, lime juice, salt, pepper).

Whisk up the ingredients for the dressing (mustards, olive oil, lemon juice, salt, and pepper).

On a bed of lettuce, assemble all your ingredients for your bowl. Start with a bed of lettuce, add half a cup of your barley mixture, add vegetables to your liking, add your chicken, drizzle the dressing on top, and enjoy!
