What to do when you have a huge batch of green tomatoes from your garden that didn't have enough time to ripen?! You make green tomato salsa of course! Super simple, easy, and delicious green tomato salsa recipe that should definitely make an appearance at your next Taco Tuesday!

 2.50 lbs green tomatoes
 2 medium onions (diced)
 2 jalopenos
 5 garlic cloves
 2 red bell pepper (diced)
 0.50 cup distilled white vinegar
 0.50 cup lime juice
 0.50 tbsp salt
 1.50 tsp cumin powder
 0.50 tbsp dried oregano
 2 tsp black pepper
 0.50 tsp chilli powder
 1 tsp sugar

Put a large pot on medium heat. Combine all the ingredients into the pot and bring to a boil. Once boiling, turn down heat to a simmer (medium-low), and cover the pot.

Simmer the salsa for about 40 minutes, stirring occasionally. The tomatoes should have popped at this point, but you can also take a masher and mash the salsa to the consistency that you desire. Let the salsa cool down before eating. Enjoy!
