Seeing as my husband is the biggest Star Wars fan I know (I only got into it because of him!), I had to make something Star Wars themed in honor of the "Star Wars: The Last Jedi" coming out today! These healthier gingerbread cookies are not only on the skinny side, but they are so adorable! Even if you aren't really a fan of the gingerbread Chewbacca, please appreciate the cuteness and try these cookies out!
Cream together the butter, brown sugar, and apple sauce. Add in your egg and molasses until well combined.
Mix together your dry ingredients (flours, cocoa powder, baking soda, ground ginger, cinnamon powder, ground nutmeg, and ground all spice).
Slowly add your dry ingredients to your wet ingredients and mix until no dry ingredients are seen.
Divide your cookie dough into two balls and plastic wrap each ball. Place in the fridge for at least 2 hours.
Preheat oven to 350 degrees F.
Flour your surface that you will be rolling your cookie dough onto. Roll out 1 ball at a time to at least 1/8 inch thickness. I did 1/4 and it was a bit on the thicker side, but up to your preference. Cut out your gingerbread men with a cookie cutter. Optional, but to make them Chewbacca-esque, take a fork and press down to create the "fur".
Bake for about 12 minutes. Let them cool completely before decorating (optional).
Optional decorating idea, but to make your gingerbread men Chewbacca-esque, take some chocolate frosting to create the utility belt. Just draw a line across the gingerbread man. Add white sprinkles on the belt to create the ammunition on the belt. For the eyes and nose, use a little bit of chocolate frosting (you can place mini chocolate chips to better define the eyes and nose). For the mouth use a little bit of vanilla frosting to create a line. Enjoy!
