Cranberry Feta Salad with Dijon Vinaigrette

By now you know that I love salads, and the options are endless! I love having vinaigrettes and very simple salad dressings, which is why I love this Cranberry Feta Salad with Dijon Vinaigrette! The combination of the vinaigrette with the feta and cranberry is so perfect! I love having this salad especially in the hot summer months!

 5 Spring Mix (or any type of salad greens)
 0.50 cup shredded carrots
 0.50 cup cranberries
 0.50 cup sunflower seeds
 0.50 cup crumbled feta cheese
Dijon Vinaigrette
 3 tbsp red wine vinegar
 3 tbsp lemon juice (freshly squeezed)
 6 tbsp olive oil
 3 tbsp whole grain dijon mustard
 2 garlic cloves (minced)
 0.25 tsp salt
 0.50 tsp black pepper

Add all the ingredients (red wine vinegar, lemon juice, olive oil, mustard, garlic, salt, and pepper) for the vinaigrette into a mason jar and shake to mix the ingredients together.

Mix your spring mix (or whatever salad greens you chose to use), shredded carrots, feta cheese, dried cranberries, and sunflower seeds together.

Toss your salad with about 6 tablespoons of the Dijon Vinaigrette (less or more to taste). Enjoy as a side salad or top with some protein (Ex. vegan chicken tenders pictured) for a whole meal.
