Chunky Guacamole

Who doesn't love some good guacamole?! I know I love having some while watching TV. My Chunky Guacamole was inspired by California Pizza Kitchen years ago. I loved how chunky the texture was and decided from then on I would make mine the same way! Check it out and let me know how you like my chunky version!

 6 hass avocados (diced)
 1 can (15.25 oz) sweet corn (drained and rinsed)
 1 can (15 oz)black beans (drained and rinsed
 1 cup onions (diced)
 1 red bell pepper (diced)
 1 serrano pepper (diced)
 2 roma tomatoes (diced)
 1 tbsp garlic (minced)
 1 /2 cup of cilantro (chopped)
 3-4 small limes (juiced)
 1 tsp of salt
 1/4 tsp black pepper

In a medium bowl, place the diced avocados and squeeze the limes over the avocado. Mix the avocados up well with the lime juice. Make sure to keep the avocados in small cubes and not smash them up. This creates a chunkier guacamole.

Mix the corn, black beans, onions, peppers, tomatoes, garlic, cilantro, salt, and pepper together. Taste to see if more salt, pepper, or lime juice is needed.

Carefully mix in the avocados and enjoy with some tortilla chips!
