I love an easy pasta dish! It's perfect and doesn't take too long when you have to make a meal in a hurry, not to mention pasta is delicious! I love this Chickpea Pasta with Zucchini and Corn because of how simple and full of flavor it is! Added benefit, because it's chickpea pasta, you get a ton more protein from this dish than if you used regular pasta! Anyways, try out this easy summer recipe!

Chickpea Pasta with Zuchinni and Corn

 8 oz Banza Chickpea Pasta (or regular pasta)
 1 tbsp avocado oil
 ½ Medium Onion (diced)
 3 Garlic cloves (minced)
 1 Jalapeno (minced)
 1 cup grape tomatoes (quartered)
 2 medium zucchini (diced)
 1 15 oz canned sweet corn (rinsed and drained)
 ½ cup marinara sauce (jarred or homemade)
 1 tsp salt
 1 tsp black pepper
 1 tsp Italian seasoning
 1 tbsp fresh basil (chopped)

Boil pasta according to package directions. While cooking move on to next steps. Make sure to reserve some pasta water before draining the pasta.

On medium heat, add oil to a large frying pan. Add in the onions, garlic, and jalapenos. Saute for 5 minutes.

Add in the tomatoes, and saute until tomatoes are nice and melted, about another 5 minutes.

Add in the zucchini and saute for another 5-6 minutes. If the mixture is getting dry, add some reserved pasta water.

Add in the remaining ingredients at this point (marinara sauce, cooked pasta, seasoning) and mix well. If the pasta seems too dry add a little of the reserved pasta water, also taste for salt and pepper at this point. Serve with some freshly chopped basil on top and enjoy!
