Cheese Tortellini Pasta Salad

I am not ready for summer to be over so I want to share with you some of my favorite summer recipes using up all those fresh ingredients! This Cheese Tortellini Pasta Salad is easy, delicious, and perfect for summer meal prepping! I love having it straight from the fridge during my lunch break! Give it a go, you won't be disappointed!

Cheese Tortellini Pasta Salad

 1 lb cheese tortellini
 2 tbsp avocado oil
 1 lb chicken sausage
 ½ medium onion (diced)
 2 cups broccoli florets
 8 oz mushrooms (diced)
 2 bell peppers (diced)
 3 cups spinach
 2 tbsp olive oil
 ½ tbsp red wine vinegar
 1 garlic cloved (minced)
 1 lemon (juiced)
 ½ tsp salt
 ½ tsp black pepper

Cook cheese tortellini according to package and set aside.


In 1.5 tbsp of avocado oil, saute the diced chicken sausage for 5 minutes on medium heat or until a nice golden color is on all sides. Set aside


Add remaining 1/2 tbsp of oil and saute onions for 5 minutes on medium heat. Add in all the rest of the veggies except for the spinach and saute for another 8-10 minutes. Add in a pinch of salt and pepper to the veggies.


While veggies are cooking, mix all your ingredient together for the salad dressing. Set aside.


Once veggies are done, add back in your chicken sausage and spinach and cook for additional 3 minutes or until the spinach has wilted down.


Once spinach is wilted down, add in your pasta and dress and mix everything together. Enjoy warm or cold from the fridge!
