Looking for a lighter crust idea? Well with cauliflower being all the hype you will not be disappointed with this Cauliflower Crust Pizza topped with cheese and turkey pepperoni. It does take a little effort to make the crust, but it’s all worth it at the end when you eat and don’t feel as guilty as you would with a regular pizza! Give it a shot, you won’t regret it!
Pulse your cauliflower florets in batches until all your cauliflower resembles rice pieces.
Steam your cauliflower with 1-1/2 cup of water for about 5-6 minutes after the water starts boiling.
Let the cauliflower cool off completely so you can handle it. Using a cheesecloth or a lint-free kitchen towel, squeeze all the excess water our of the cauliflower. You want to make sure that you squeeze ALL the water and that your cauliflower is completely dry.
Preheat oven to 425 degrees F.
Add in all of your other ingredients (egg, cheese, almond meal, garlic powder, onion powder, salt, and pepper) to your cauliflower and mix thoroughly.
Spray a baking tray or pizza pan with some nonstick spray. Shape your cauliflower mixture on the tray into a circle (or whatever shape).
Bake your cauliflower crust for 14-16 minutes or until nice and golden-brown on top.
Take out your crust and add the marinara sauce in a thin layer. Top with the pepperoni and cheese.
Bake in the oven for 10-12 minutes or until the cheese is nice and golden. Top with some dried parsley (optional) and enjoy!
