Do you have overripe bananas sitting on your countertop that are too mushy to eat? I love doing two things with them, one, making smoothies, and two, making banana bread. Keeping up with the fall theme, I decided to make a pumpkin version of my favorite banana bread! Give this healthier version a try and let me know how you like it in the comments!
Preheat over to 325 degrees F. Grease a loaf pan with some baking spray.
Sift together all the dry ingredients (flour, baking soda, and spices).
Whisk together the brown sugar and apple sauce until you get a nice, creamy consistency. Add in the egg, egg white, and vanilla extract. Use a handheld mixer or whisk to mix everything together.
Mix together your mashed up bananas and pure pumpkin puree. Add this to your wet ingredients in step three. Mix everything until it's well incorporated.
Add your wet ingredients to your dry ingredients. Mix until you can no longer see any dry flour. Be careful not to over mix, just enough to make sure the dry ingredients are mixed with the wet ingredients.
Pour into your loaf pan. Add the pepitas (optional) to the top of your bread in a single layer.
Bake in the over for 60-70 minutes or until an inserted toothpick comes out clean. Rest bread for 10-15 minutes before cutting and enjoying!
