Baked Truffle Fries

Who doesn't love a big basket of fries, especially TRUFFLE FRIES?! I know I do, and with my better baked version, you don't have to feel as guilty consuming more than your share. I love how crispy on the outside, soft on the inside these fries are! And with all the spices, yummmmmy! Definitely one of my favorite ways to eat potatoes!

 2 large russet potatoes
 2 tsp truffle oil
 1 tbsp Herb de Provence
 0.25 tsp oregano
 1 tsp smoked paprika
 0.25 tsp chili powder
 0.25 tsp onion powder
 0.25 tsp garlic powder
 0.25 tsp mustard powder
 0.25 tsp black pepper
 0.25 tsp salt

Preheat oven to 400 degrees F.

Cut up potatoes into long 1 inch thick strips. Soak in water for about 5-10 minutes. Using a dish rag, thoroughly dry the potato strips.

On an aluminum lined baking tray sprayed with some non-stick spray, lay the potato strips in one layer .

Add the truffle oil and then the spices (Herb de Provence, oregano, paprika, chili powder, onion powder, garlic powder, mustard powder, black pepper, and salt). Give the potato strips a good mix so everything is coated with the oil and spices.

Bake in the oven for 25 minutes, or 30 minutes for darker, crispier fries. Let the fries cool for a few minutes before enjoying!
