Baked Chicken Katsu

As a part of my Better Baked series this month, I have decided to make my first recipe Japanese inspired! I love Chicken Katsu and Japanese Curry (I have a recipe for that already), something about that combo is so good! But if you know how Katsu is traditionally made, then you know it's fried, well this version is just as crispy and tasty without all the oil! Definitely a win in my books!

1 lb chicken breast (sliced lengthwise to thin them out)
 2 tbsp all purpose flour
 1 egg (beaten)
1 cup panko crumbs (Japanese bread crumbs)
 1 tbsp sesame seeds
1 tsp Shichimi Togarashi (Japanese 7 Spice Blend)
 0.50 tsp salt
 0.50 tsp black pepper
1

Preheat oven to 400 degrees F. Spray your baking tray with a little bit of oil spray like Pam.

2

Create a dredging station by putting your flour in a shallow plate, your beaten egg in a separate shallow plate, and your panko crumbs mixed with the sesame seeds, Shichimi Togarashi, salt and pepper in another shallow plate.

3

Coat 1 thinly sliced chicken breast with flour first, then cover with egg, lastly cover with the panko crumb mixture until all sides are covered, and place on your baking tray. Keep coating the chicken breasts one at a time until you have done them all. Spray the tops with some oil spray like Pam.

4

Cook in the oven for 15 mins, turning them around once at around 10 mins. Broil for an additional 5 or so minutes to give tops a nice golden color. Enjoy with a side of rice!
