Preheat oven to 375 degrees F.
Oil the bottom of a 9x13 baking dish or 13' round cast iron skillet. In a separate bowl, mix together the spinach, green onions, artichokes, sun-dried tomatoes, bell pepper, garlic, and Italian seasoning. Place all the veggies in one even layer at the bottom of your baking dish or skillet.
Whisk your eggs and milk together until nice and fluffy. Add in salt and pepper. When everything is well combined, gently stir in the feta cheese.
Pour the egg mixture carefully on top of the spinach mixture so that the egg layer is nice and evenly distributed in your dish or skillet.
Bake in the oven for 35 minutes. Let cool for about 5-8 minutes. Enjoy with a side of hot sauce!
