Air Fryer Falafel

Falafels are one of my favorite dishes to get at Mediterranean restaurants because of how crispy and delicious they are! My Air Fryer Falafels gives you the best of both worlds, not only do they allow you to enjoy falafels, but you don't have to feel guilty about all that oil that is in it. Air Fryers are amazing!

Air Fryer Falafel

 2 15.5 oz can chickpeas (drained and dried w/ paper towel)
 1 large onion (diced)
 5 garlic cloves (minced)
 ¾ cup cilantro
 ¾ cup parsley
 ¼ cup green onions
 2 tsp cumin
 ½ tsp cinnamon
 ½ tsp cayenne pepper
 1 tsp salt
 1 tsp black pepper
 8 tbsp chickpea flour

In a food processor, blend all your aromatics into a fine paste (onions, garlic, cilantro, and parsley).

Add in your spices and chickpeas. Pulse until the chickpeas are smaller bits. Do not blend all the way.

Add in the chickpea flour and pulse a few more times making sure to scrape the sides.

Place falafel mixture into a bowl and refrigerate for a 2-3 hours. This helps the flavors combine and the mixture to become more tacky.

Preheat air fryer to 350 degrees. Form falafel mixture into 2 tbsp balls (should make about 24).

Spray bottom of air fryer and place falafels into a single layer (you will have to make these in batches). Spray the tops of the air fryer too. Bake for 14-16 minutes, making sure to turn half way through to evenly brown all sides. Enjoy in a wrap or with rice!
