Begun Bhaji is something that I grew up eating in my Bengali household, but now that I have my own household, I realize how unhealthy all that deep frying is. I wanted to recreate the same flavors but in a healthier way, so here is my air fryer Begun Bhaji. Same authentic flavor, half the calories!
Preheat your air fryer to 280 degree F. Mix all your spices together and sprinkle evenly on all the eggplant pieces.
Add the mustard oil to each piece evenly. Spray air fryer with a little bit of avocado spray. Lay pieces in one layer evenly (may need to do multiple batches).
Bake for 20-25 (for extra crispy) minutes, flipping halfway through. Enjoy with a side of rice and daal!
