Pumpkin Spiced Madeleine Cookies

Directions

Preheat oven to 350 degrees F. Spray Madeleine tray with oil spray.

Cream together the butter and sugar for a few minutes until mixture is pale yellow and fluffy. Add the eggs and vanilla extract and mix well. Lastly add in the pumpkin puree and mix in with all the wet ingredients.

Whisk together the dry ingredients (except for optional powder sugar). In batches, put a couple tablespoons of the mixture in each of the Madeleine cavity.

Bake cookies for 10-12 minutes. Once out of the oven cool for a couple minutes and then turn over on a tray. Dust with powdered sugar (optional) and enjoy!
