3/4 cup sugar (I sued mock fruit sweetener to keep it light)
1 tsp vanilla extract
3/4 cup pumpkin puree
1 cup flour
1 tsp baking powder
1 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp salt
powdered sugar (optional)
1Preheat oven to 350 degrees F. Spray Madeleine tray with oil spray.
2Cream together the butter and sugar for a few minutes until mixture is pale yellow and fluffy. Add the eggs and vanilla extract and mix well. Lastly add in the pumpkin puree and mix in with all the wet ingredients.
3Whisk together the dry ingredients (except for optional powder sugar). In batches, put a couple tablespoons of the mixture in each of the Madeleine cavity.
4Bake cookies for 10-12 minutes. Once out of the oven cool for a couple minutes and then turn over on a tray. Dust with powdered sugar (optional) and enjoy!
