Delicious Instant Pot Scrimp Scampi that comes together in less than half an hour?! Yes, please! I love this for busy weeknights because you can defrost shrimp really fast, and then the dish itself takes no time to cook and eat! Love easy instant pot recipes!
Prep: 5 mins
Cook: 10 mins
3 tbsp avocado oil
3 cloves garlic (minced)
1 medium onion (diced)
2 lb peeled shrimp and deveined
12 oz angel hair pasta, broken in half
3 cups vegetable stock
1/2 whole fresh lemon (squeezed)
1/2 tsp red chili flakes
1 tsp smoked paprika
1 tsp sea salt
1 tsp pepper
1/4 tsp red pepper flakes
3 tbsp capers
fresh/dried parsley (optional)
1Set instant pot to saute mode and add oil. Saute onions for a few minutes or until translucent.
2Add the garlic and spices (chili flakes, paprika, salt, and pepper) and saute for another minute. Add in the shrimp and saute for 5-6 minutes until the shrimp is slightly pink. (Don't worry if not cooked through, it will be cooking more).
3Add in your vegetable stock and the pasta. Make sure to break pasta and half and cover each of the strand with the stock. Make sure the pasta sticks are separated so they don't cook together.
4Close lid and press the Manual button. Cook pasta for 3 minutes.
5Once the instant pot beeps, quick release the steam. Add the capers and parsley and mix well. Enjoy warm with additional lemon slices!
